How to make Instant Pot Cilantro Lime Rice

Start by rinsing the rice under cold water until the water runs clear (about 4-5 times in a fine strainer). Add rice and fresh water to your Instant Pot. Cook the rice on the quick pressure release setting. Prevent sticky rice by draping a tea towel over the top of the rice and putting the Instant Pot lid back on. Let rest for 5-10 minutes. Stir in chopped cilantro and lime juice. Serve and enjoy!

This recipe also works in a pressure cooker. It can also work well with Jasmine or long-grain white rice. These alternate methods might require slightly different cook times.

  • 1 tea towel

Ingredients
  

  • 1 cup Basmati Rice
  • 1 cup Water
  • 1/4 cup Cilantro chopped
  • 2 medium Limes juiced

Instructions
 

  • Rinse the basmati rice in a fine-mesh strainer under cold running water until the water runs clear.
  • Add the rinsed rice and the appropriate amount of water to your Instant Pot. Close the Instant Pot lid securely.
  • Select the "Rice" button on your Instant Pot to start the cooking process.
  • Once the cooking cycle is complete, release the pressure quickly by turning the steam release valve to the "Venting" position. Be careful of the hot steam.
  • After the pressure has been released and the float valve has dropped, carefully open the Instant Pot lid. To prevent the rice from becoming too sticky, drape a clean tea towel over the top of the rice in the Instant Pot. Place the Instant Pot lid back on top of the tea towel to cover it.
  • Allow the rice to rest for at least five minutes, but no longer than 10 minutes. This will help the rice steam and fluff up.
  • Remove the lid and tea towel, stir in the cilantro and lime juice. Serve and enjoy!
