Balsamic Sautéed Garlic Scapes

Ingredients
  

  • 2 cups Garlic Scapes chopped
  • 1/2 cup Red Onion chopped
  • 1 Tbsp Avocado Oil
  • 1 Tbsp Balsamic Vinegar
  • Sea Salt & Black Pepper to taste

Instructions
 

  • Preheat a large skillet over medium-high heat.
  • Add the oil to the skillet and allow it to heat until it shimmers.
  • Add the chopped garlic scapes and red onion to the skillet. Sauté for about 7-10 minutes, stirring occasionally, until they start to soften and brown.
  • Pour in the balsamic vinegar and continue to cook for another 2-3 minutes, stirring frequently, until the vinegar reduces slightly and coats the vegetables.
  • Season with salt and pepper to taste. Cook for another minute, stirring to combine all the flavors.
  • Serve and enjoy!

Notes

Leftovers:  Refrigerate in an airtight container for up to five days.
Serving Size:  One serving is equal to approximately 3/4 cup.
No Avocado Oil:  Use extra virgin olive oil.
